A little sweet, a little spicy...terrific served with cheese or spread on a piece of toast.

zest and juice of 1 lemon

sherry vinegar

sprigs of thyme

cinnamon stick

of cloves

red pepper flakes

kosher salt

Combine all ingredients in saucepan.

Bring to a boil, then reduce to a simmer.

Continue to simmer for 40-45 minutes, until mixture is reduced and jammy.

Remove cinnamon stick and thyme sprigs.

Serve with toast or cheese or in place of ketchup.
