Ingredients
  • 1/2 cup old-fashioned oats (not quick cooking or steel cut)
  • 2 Tbsp peanut butter
  • 1 tsp honey
  • 1/3 cup fresh blueberries
  • 1/2 cup nonfat milk
  • 2 Tbsp blueberry preserves
  • berries, for topping
Instructions
  1. Add the oats to a mason jar (with lid) or any small bowl or jar.

  2. Add the peanut butter, honey, blueberries and milk to the oats. Give it a stir and be sure the oats are fully submerged.

  3. Add the preserves and give it a gentle stir. Cover tightly and place in the refrigerator overnight (or at least 6 hours).

  4. Top with additional berries and serve. If you prefer warm oats, heat gently in the micorwave or on the stove until warmed through.

Recipe Notes
  • Be sure to use old-fashioned (NOT quick cooking) oats for this recipe. Quick cooking oats will become mushy if left in milk overnight.
  • I like a drizzle of honey for sweetness, but you can use agave or even omit it entirely if the jam is sweet enough for you.
  • Use you favorite milk (whole, nut milk, etc.) if nonfat isn't your thing. Just be sure the oats are fully submerged before chilling.
  • A mason jar with a tight fitting lid is the ideal vessel for overnight oats, but any small jar or bowl will work as long as it is covered before refrigerating.
