Everything Bagel Salmon with Tomato Cucumber Salad

We're bringing brunch to dinner with this everything bagel salmon with tomato cucumber salad that tastes just like your favorite bagel with all the fixings (minus the bagel!).

Ingredients
  • 1 1/2 lbs salmon (4 - 6 oz skinless filets)
  • 1 cup buttermilk
  • 1/4 cup Wondra flour (AP can be substituted)
  • 1/4 cup everything bagel spice

Tomato Cucumber Salad

  • 12 oz cherry tomatoes, halved or quartered
  • 1 seedless cucumber, diced
  • 1 small red onion, diced
  • 2 Tbsp capers
  • 1 lemon, zested and juiced
  • 1/4 cup extra virgin olive oil + extra for sautéing
  • kosher salt and pepper
Cream Cheese Smear
  • 1/2 cup whipped cream cheese
  • 1 Tbsp heavy cream or half and half
Instructions
Everything Bagel Salmon
  1. Marinate the salmon in the buttermilk for 30 mins. Pat the excess buttermilk off with a paper towel before dredging.

  2. Combine the flour and everything bagel spice in a shallow dish. Dredge the salmon in the coating and set aside.

  3. Coat the bottom of a non stick pan with olive oil and heat until hot, but not smoking.

  4. Add the salmon and sauté on each side about 2-3 mins (for medium rare - medium depending on the thickness of your salmon). Adjust the heat if necessary to prevent the salmon from burning.

  5. Remove the salmon to a rack or paper towel lined plate.

Tomato Cucumber Salad
  1. While the salmon rests in the buttermilk, make the tomato cucumber salad. Combine the tomatoes, cucumber, red onion, capers in a bowl.

  2. Whisk together the lemon juice, lemon zest, and olive oil in a bowl. Season to taste with salt and pepper. Toss with the vegetables.

To Serve
  1. Stir the cream cheese with a spoon of heavy cream or half and half to thin slightly.

  2. Smear a spoonful of the thinned cream cheese on a plate. Top with a salmon filet and spoon the tomato cucumber over the top.

Recipe Notes
  • Wondra flour gives the salmon a light, crispy crust. If you don't have it, all purpose flour can be substituted.
  • Can't find everything bagel spice? Simply combine equal parts dried minced garlic, poppy seeds, sesame seeds, dried minced onion, and kosher or sea salt.
  • If you're making your own everything bagel spice, make a big batch! You can use it to top casseroles, make homemade bagel crisps or crackers, shake over popcorn or top avocado toast!
  • Soaking the salmon imparts a slightly tangy flavor and helps the coating to adhere. Don't let it sit much longer than 30 mins or it can effect the texture of the fish.
  • Be sure to lightly season the salad with salt and pepper, but don't season the fish with salt and pepper. Everything bagel spice already has a high salt content and additional salt will make the fish too salty.
  • The Wondra coating allows the fish to brown nicely. Be sure to adjust the heat if it begins to0 brown too quickly.
  • The cream cheese smear isn't a must, but makes a pretty presentation and adds a nice creaminess to the dish.
