
We're bringing brunch to dinner with this everything bagel salmon with tomato cucumber salad that tastes just like your favorite bagel with all the fixings (minus the bagel!).
Tomato Cucumber Salad
Marinate the salmon in the buttermilk for 30 mins. Pat the excess buttermilk off with a paper towel before dredging.
Combine the flour and everything bagel spice in a shallow dish. Dredge the salmon in the coating and set aside.
Coat the bottom of a non stick pan with olive oil and heat until hot, but not smoking.
Add the salmon and sauté on each side about 2-3 mins (for medium rare - medium depending on the thickness of your salmon). Adjust the heat if necessary to prevent the salmon from burning.
Remove the salmon to a rack or paper towel lined plate.
While the salmon rests in the buttermilk, make the tomato cucumber salad. Combine the tomatoes, cucumber, red onion, capers in a bowl.
Whisk together the lemon juice, lemon zest, and olive oil in a bowl. Season to taste with salt and pepper. Toss with the vegetables.
Stir the cream cheese with a spoon of heavy cream or half and half to thin slightly.
Smear a spoonful of the thinned cream cheese on a plate. Top with a salmon filet and spoon the tomato cucumber over the top.
