Today I’m bringing you all my favorite brunch flavors for dinner in this everything bagel salmon with tomato cucumber salad. When I gather with friends for a casual weekend brunch, a bagel spread is always a fan favorite.
A classic bagel spread has a little something for everyone and my absolute favorite combo is an everything bagel topped with lox, a smear of cream cheese, cucumber, sliced tomatoes, a little red onion, and a sprinkle of capers. But why should breakfast have all the fun?
Today we’re taking all those flavors and components and translating them into a light and quick dinner. Salmon filets take a quick soak in buttermilk, then are dredged in everything bagel seasoned flour and sautéed. While the salmon soaks in the buttermilk, it’s time to whip up the tomato cucumber salad.
This salad is fresh and bright, tossed together with a simple lemony dressing. I love the crunchy texture of the cucumbers paired with the salmon, and the capers and lemon bring just the right pop of acid to the dish.
Oh, but I see you my cream cheese lovers and I certainly didn’t forget you. After all, you can’t have an everything bagel without the cream cheese (never mind that we’re not actually having the bagel). To get that creaminess to the dish we simply stir together a dollop or two of whipped cream cheese thinned with a splash of cream.
Spoon a little on the plate, make a decorative whoosh if you’re feeling fancy, and top with the everything bagel salmon filet and a few scoops of the tomato cucumber salad.
And there you have it. A “bagel” brunch for dinner. Quick and easy enough for a weeknight, but pretty and elevated enough to serve to company. The salty, seedy coated salmon is an absolute keeper and couldn’t be easier to make. So the next time you’re craving breakfast for dinner, skip the eggs and bring on the salmon!
Let’s make Everything Bagel Salmon with Tomato Cucumber Salad
- Gather the tomato cucumber salad ingredients.
- Dice the vegetables and whisk together the dressing.
- Combine the vegetables with the dressing.
- Marinate the fish in buttermilk for 30 mins.
- Dredge in seasoned flour.
- Saute and serve with the salad and a cream cheese smear (if desired).
Tips for success
- Wondra flour gives the salmon a light, crispy crust. If you don’t have it, all purpose flour can be substituted.
- Can’t find everything bagel spice? Simply combine equal parts dried minced garlic, poppy seeds, sesame seeds, dried minced onion, and kosher or sea salt.
- If you’re making your own everything bagel spice, make a big batch! You can use it to top casseroles, make homemade bagel crisps or crackers, shake over popcorn or top avocado toast!
- Soaking the salmon imparts a slightly tangy flavor and helps the coating to adhere. Don’t let it sit much longer than 30 mins or it can effect the texture of the fish.
- Be sure to lightly season the salad with salt and pepper, but don’t season the fish with salt and pepper. Everything bagel spice already has a high salt content and additional salt will make the fish too salty.
- The Wondra coating allows the fish to brown nicely. Be sure to adjust the heat if it begins to0 brown too quickly.
- The cream cheese smear isn’t a must, but makes a pretty presentation and adds a nice creaminess to the dish.

- 1 1/2 lbs salmon (4 – 6 oz skinless filets)
- 1 cup buttermilk
- 1/4 cup Wondra flour (AP can be substituted)
- 1/4 cup everything bagel spice
Tomato Cucumber Salad
- 12 oz cherry tomatoes, halved or quartered
- 1 seedless cucumber, diced
- 1 small red onion, diced
- 2 Tbsp capers
- 1 lemon, zested and juiced
- 1/4 cup extra virgin olive oil + extra for sautéing
- kosher salt and pepper
- 1/2 cup whipped cream cheese
- 1 Tbsp heavy cream or half and half

Marinate the salmon in the buttermilk for 30 mins. Pat the excess buttermilk off with a paper towel before dredging.

Combine the flour and everything bagel spice in a shallow dish. Dredge the salmon in the coating and set aside.

Coat the bottom of a non stick pan with olive oil and heat until hot, but not smoking.

Add the salmon and sauté on each side about 2-3 mins (for medium rare – medium depending on the thickness of your salmon). Adjust the heat if necessary to prevent the salmon from burning.

Remove the salmon to a rack or paper towel lined plate.

While the salmon rests in the buttermilk, make the tomato cucumber salad. Combine the tomatoes, cucumber, red onion, capers in a bowl.

Whisk together the lemon juice, lemon zest, and olive oil in a bowl. Season to taste with salt and pepper. Toss with the vegetables.
