Ingredients
Tuna Marinade
  • 1/8 cup soy sauce
  • 2 garlic cloves, crushed
  • 2 Tbsp brown sugar
  • 1/4 cup extra virgin olive oil
  • kosher salt and pepper
Prep the Tuna
  • 2 Tbsp whole coriander
  • 1 1/2 Tbsp whole black peppercorns
  • 12 oz Ahi tuna steaks (6-7 oz each)
Corn Salsa
  • 1 cup roasted or grilled corn kernels (from 2 ears corn, roasted or grilled and kernels cut off)
  • 2 Tbsp cilantro, chopped
  • 2 Tbsp scallions (white and pale green parts only), sliced
  • 1 lime, juiced and zested
  • 1 Tbsp extra virgin olive oil
  • kosher salt and pepper
Instructions
Marinade
  1. Combine first three ingredients for tuna marinade in a bowl. Slowly whisk in the olive oil and season with salt and pepper.

  2. Add tuna to the marinade, turning to coat. Refrigerate for 30 mins - 1 hour.

Make the Tuna
  1. Grind whole coriander and peppercorns in a spice grinder until coarsely ground.
  2. Remove tuna from marinade and turn to coat in spice rub.
  3. Sear the tuna steaks in an oiled pan over high heat, 2 minutes per side or until desired doneness (I recommend rare).

Corn Salsa
  1. Combine all ingredients for the corn salsa and toss together.
  2. Slice tuna if desired and serve with salsa.
