Corn Pancake Breakfast Tacos

- Corn pancakes - Eggs - Avocado - Roma tomato - Scallion - Ear corn - Cheddar cheese - Kosher salt and pepper - Hot sauce

Warm the corn pancakes in the microwave until soft and pliable.

INSTRUCTIONS

Pile eggs and a spoon of other ingredients on a warm pancake.

Fold and  eat like a taco.
