Cornmeal waffles topped with brown sugar cinnamon honey butter

  • Cornmeal Waffles
  • 2 cups all purpose flour
  • 1 1/2 cups fine yellow cornmeal
  • 1 Tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1/4 cup sugar
  • 6 Tbsp melted butter cooled
  • 3 cups buttermilk
  • 3 eggs separated

  • Brown Sugar Honey Butter
  • 1 stick butter softened
  • 2 Tbsp honey
  • 2 Tbsp light brown sugar
  • 2 tsp cinnamon
  • 1/2 tsp salt
  1. Cornmeal Waffles: Heat the waffle iron and preheat the oven to 250 degrees.
  2. In a large mixing bowl, whisk together the flour, cornmeal, baking powder, baking soda, salt, cinnamon and sugar.
  3. In another bowl, whisk together the melted butter, buttermilk and egg yolks and stir into the flour mixture, combining to form a smooth batter.
  4. In a clean bowl, beat the egg whites with an electric mixer until stiff peaks form.
  5. Carefully fold in the eggs whites to the waffle batter, being careful not to overmix.
  6. Spoon 1/3 - 1/2 cup batter into each waffle compartment and cook until golden and crisp, about 3-4 minutes.
  7. Place cooked waffles on a baking sheet and hold in preheated oven while you cook the remaining waffles.
  8. Brown Sugar Honey Butter: Combine all ingredients in bowl and mix until smooth and well combined.
  9. Top waffles with butter and syrup if desired and enjoy!
