This is a twist on the traditional caprese salad, but still simple and seasonal. Swap plums for tomatoes, throw in a handful of mint and....magic!
  • 1 lb ripe plums I like to use a mix..red, black, yellow
  • 8 oz burrata or fresh mozzarella
  • 1 cup fresh basil leaves
  • 1 cup fresh mint leaves
  • Good extra virgin olive oil to taste
  • Kosher salt and freshly ground black pepper
  1. Slice the plums in half and remove the pits. Slice into rounds.
  2. Scatter half of the basil and mint leaves on a platter. Then arrange the plum rounds on top, leaving room in the center for the burrata. Sprinkle with remaining herbs.
  3. Place the burrata in the center.
  4. Generously drizzle with good olive oil and season generously with kosher salt and pepper.
