Combine the first three ingredients for the tuna marinade in a bowl. Slowly whisk in the olive oil and season with salt and pepper.

Add the tuna to the marinade, turning to coat. Refrigerate for 30 minutes to 1 hour.

Grind whole coriander and peppercorns in a spice grinder until coarsely ground.

Remove the tuna from the marinade and turn to coat in spice rub.
