While the cauliflower roasts, make the sauce. Heat the butter in a large saucepan over medium heat. Add the diced onion and cook until translucent, about 5 mins.
Slowly pour in the milk while vigorously whisking. Add the rosemary sprigs and the nutmeg. Bring the milk mixture to a boil and reduce to a simmer, whisking occasionally to prevent it from sticking.
