– curly pasta – pancetta – shallots – garlic – anchovy paste – dry mustard – white wine – whole milk – heavy cream – mascarpone – cheddar cheese – gruyere – fontina – parmesan grated – kosher salt – thyme – hot sauce

Cook pancetta over medium heat in a dutch oven or large heavy bottomed pot until golden brown, about 5 mins.
