Lemony Avocado Toast with Arugula

A smear of creamy avocado mash on multi grain toast topped off with peppery arugula makes this avocado toast a quick and satisfying breakfast, lunch, or dinner.

INGREDIENTS

Lemon Vinaigrette: - Lemon zest - Lemon juice - Kosher salt - Pepper - Extra virgin olive oil Avocado Mash: - Avocado - Lemon zest - Lemon juice - Kosher salt - Red pepper flakes

Lemon Vinaigrette: Whisk together all ingredients until emulsified.

Avocado Mash: Cut avocado in half and remove the pit. Score the avocado halves and then scoop the avocado into a small bowl.

Add the zest, lemon juice, salt, red pepper flakes, and olive oil and mash together with a fork.
