Easy Shrimp Scampi

This easy shrimp scampi recipe is perfect for when dinner needs to be simple and quick to prepare on a busy weeknight.

INGREDIENTS

- Unsalted butter - Extra virgin olive oil - Garlic - Uncooked shrimp - Kosher salt - Ground black pepper - Red pepper flakes - Dry white wine - Lemon - Reserved pasta water - Parsley

Melt 2 Tbsp. butter with olive oil in a large sauté pan set over low heat. Add the garlic and sauté for 1-2 mins.

INSTRUCTIONS

Increase the heat to medium and add the red pepper flakes and the shrimp. Season the shrimp with salt and pepper cook until just pink. Remove the shrimp to a plate and keep warm.

Add the white wine, lemon juice, and pasta water to the pan and bring to a boil. Swirl in the remaining 2 Tbsp. of butter and then add the parsley.

Add the shrimp and pasta to the pan and toss well. Serve with grated parmesan cheese if desired.
