Cornmeal Waffles

This year we’re busting out the waffle iron and making cornmeal waffles topped with brown sugar honey butter.

INGREDIENTS

Cornmeal Waffles: - All purpose flour - Yellow cornmeal - Baking powder - Baking soda - Salt - Cinnamon - Sugar - Butter - Buttermilk - Eggs separated

Heat the waffle iron and preheat the oven to 250 degrees. In a large mixing bowl, whisk together the flour, cornmeal, baking powder, baking soda, salt, cinnamon and sugar.

INSTRUCTIONS

In another bowl, whisk together the melted butter, buttermilk and egg yolks and stir into the flour mixture, combining to form a smooth batter.

In a clean bowl, beat the egg whites with an electric mixer until stiff peaks form. Carefully fold in the eggs whites to the waffle batter, being careful not to overmix.

Spoon 1/3 - 1/2 cup batter into each waffle compartment and cook until golden and crisp, about 3-4 minutes.
