Chicken Meatball Soup

Grab your spoon and get ready to dive into a big bowl of hearty, yet surprisingly light chicken meatball soup. A light salad and a hunk of crusty Italian bread will make it a meal!

INGREDIENTS

Chicken Meatballs: - Chicken - Egg - Whole milk - Panko or regular breadcrumbs - Parmesan cheese - Dried Italian seasoning - Garlic powder - Parsley - Kosher salt - Ground black pepper

Chicken Meatballs: Combine all ingredients in a bowl and mix to combine. Take care not to overmix or the meatballs will become tough.

INSTRUCTIONS

Roll out heaping tablespoon-size meatballs and set aside. Heat 2 Tbsp. olive oil in a Dutch oven or heavy bottomed pot and add meatballs to the pan.

Add the tomato paste & stir. Add the water & cook for 2 mins, stirring up all the bits that are stuck to the pan. Add the sugar, crushed tomato, tomato sauce, stock & all the herbs and seasonings.

Brown the meatballs over med heat, 3-4 mins. Remove to a plate and reserve.
