Autumn Caramel Popcorn (Spicy!)

Crunchy, buttery, popcorn and nuts means while the kids are out trick or treating, the grown-ups can indulge in a sweet and salty treat of their own!

INGREDIENTS

– Lightly salted popcorn, popped  – Dry roasted peanuts – Cinnamon Chex cereal – Sugar – Light corn syrup – Unsalted butter – Water – Kosher salt

Combine popcorn, peanuts, and cereal in a large, heat-proof bowl and set aside. Line two sheet pans with non-stick foil, set aside.

INSTRUCTIONS

Combine the sugar, corn syrup, butter, and water in a medium, heavy bottom saucepan over medium/high heat.

Stir until butter is melted and attach a candy thermometer to the saucepan. Boil until the candy thermometer reaches 295 degrees.

Turn off heat and stir in salt and spices. Pour caramel over the popcorn mixture and carefully stir to combine using a wooden spoon.
