Welcome back grilling season with this easy grilled onion and swiss flatbread that is made for sharing. With just a handful of ingredients, minimal prep and mere minutes on the grill, you can have this sweet and salty onion and Swiss flatbread on the table in no time.

Because there are just a few ingredients in this recipe, you want to be sure they are all of the highest quality, especially the cheese. Finlandia Imported Cheese is just that. Made by master cheesemakers from Finland, their cheeses are crafted from pure, natural ingredients with nothing artificial and no added hormones.

I selected Finlandia’s Swiss cheese for this flatbread recipe because the rich and nutty flavor pairs deliciously with the browned onions, fresh herbs, and sweet honey. The pre-packaged slices make it so easy to prep, ideal for summer entertaining.

This recipe is super versatile too. You can swap different herbs or add some grilled veggies or prosciutto to make it a meal. Just be sure to watch your grill temperature so the bread doesn’t burn. I recommend an indirect cooking method to get the cheese melty and gooey without burning the bottom.

Now let’s get grilling!

  1. Gather and prep your ingredients for grilled onion and Swiss flatbread.

  3. Grill the onions until they are softened, browned and slightly charred.
  4. Brush the flatbread with oil, season and grill on one side. Remove to a tray for topping.
  5. Layer the toppings on the grilled side of the flatbread and grill until the cheese is melted and bubbly.
  6. Top the grilled flatbread with a sprinkle of chives and salt and a drizzle of olive oil. Serve immediately.

Tips for success

  • Finlandia Swiss cheese pairs perfectly with the onions and sweet honey, but Finlandia Cheddar Gruyere or Gouda slices would make a tasty swap.
  • If you can’t find regular flatbread rounds, naan makes an excellent substitution.
  • If you use honeycomb, chop up the comb and mix it with a little runny honey so it’s easy to drizzle.
  • An indirect cooking method is ideal for this flatbread so the bottoms don’t burn and the cheese is melty and gooey for serving.
  • A sprinkle to salt to finish makes this flatbread sing.

Ingredients
  • 2 flatbread rounds (naan can be substituted)
  • 2 onions, peeled and sliced into rounds
  • 3 Tbsp extra virgin olive oil, divided
  • kosher salt and pepper
  • 7 oz Finlandia Swiss Cheese, 10 slices (1 pkg)
  • 2 Tbsp honey or honeycomb
  • 1 Tbsp fresh thyme, minced
  • 1 Tbsp chives, minced
Instructions
  1. Be sure all of your ingredients are prepped and ready. Heat a grill to med/high heat and brush the onion slices with 1 Tbsp of olive oil. Season lightly with salt and pepper.

  2. Grill the onions until softened and browned on both sides, flipping once. Remove to a plate.

  3. Brush the flatbread on both sides with 1 Tbsp of olive oil and sprinkle with salt and pepper. Lay the flatbread on the grill and grill for 1-2 minutes.

  4. Remove the flatbread from the grill and top (on the grilled side) with the swiss cheese, onions (breaking up the rounds), honey, and thyme. Season lightly with salt and pepper.

  5. Turn off one side of the grill and leave the other side on med/high. Place the topped flatbreads on the cool side of the grill, close the top, and grill until the flatbread is golden and toasted around the edges and the cheese is melty, about 3-4 mins.

  6. Drizzle with reserved olive oil, sprinkle with chives and a pinch of salt. Slice and serve.

I made this flatbread using Naan as suggested. It was absolutely delicious one of the best meals I have had in a long time and I love to cook good food. It’s a keeper in my recipe file for sure. Excellent.
