Fire up the grill for the ultimate outdoor party food!
Memorial Day is just a few short days away and we are finally in the home stretch til summer! Couldn’t get here soon enough for me after a looooong winter and an extra soggy spring. I promise you that the sun is going to shine this weekend even if I have to stand on my chair and hold it up there myself.
Isn’t it crazy how the weather can truly mess with our psyche? I’ve noticed it this year in particular when the cold, gray days seemed to heavily outweigh the cheerfully bright ones. Not to get all new-agey on you, but my mood and productivity clearly downshifted when the gray ones stacked up and I felt like I could take on the world when the sun finally came out. Don’t get me wrong, I enjoy a good rainy day…preferably on a Sunday, when we can get all cozy with a movie, a blanket and chill. But I’ve had my fill this spring (hear that Mother Nature?) and I’m ready to go full flip flop.
So hello to the first (unofficial) summer weekend and for me that means the three f’s…food, friends, and fun. We’re beach-bound and plan to soak up every last drop of sun and eat easy meals alfresco. A planner by nature, I’m planning (yes I’m aware of the irony) to not over-plan our meals this weekend. Maybe we’ll grab some fresh fish or throw some fat, juicy burgers on the grill. Tacos are always an easy choice and if we’re entertaining it’s going to be a pile of grilled chicken wings for sure.
Okay, okay so I know I said I wasn’t planning, but if we’re making grilled chicken wings, they do require a teensy bit of forethought. The garlic herb marinade whips up quickly, but the longer the chicken wings sit in it the better. So throw them in the marinade the night before and forget em. After a good long soak, they take about 15 mins on the grill and the only energy you’ll need to exert the following day is turning them occasionally so they cook through. They’re fantastic party food, but can be a tasty main dish paired alongside a salad or some grilled vegetables. So pack the cooler, swap the wellies for flip-flops, grab a long, semi-mindless read and let’s get our summer on! Hope you have a fantastic holiday weekend!
- 1/2 cup white wine vinegar
- 1/2 cup white wine
- 5 cloves garlic, smashed
- 8 sprigs fresh thyme
- 1/4 cup fresh parsley chopped
- 1/2 tsp red pepper flakes
- 2 tsp dried Italian seasoning
- 1 tsp sugar
- 2 tsp kosher salt
- 1/4 tsp black pepper
- 1 lemon, zested (no juice, zest only)
- 3/4 cup olive oil
- 2 lbs chicken wings, party style
- minced parsley, for garnish
Combine all of the ingredients for the marinade in a large bowl and whisk together.
Add the chicken wings and toss well to coat. Cover the bowl or transfer the wings and marinade to a large ziplock bag and chill for at least four hours or overnight.
Remove the chicken wings from the marinade and pat lightly. Heat a grill to medium heat and lay the wings in a single layer on the grate.
Close the grill and cook for 15- 20 mins, turning occasionally. Reduce the heat to medium/low midway through cooking.
Serve garnished with minced parsley if desired.
Yields about a dozen wings.
