Garlic and Herb Marinated Grilled Chicken Wings

Grilled chicken wings are the perfect food for an outdoor gathering. They’re juicy and flavorful, super easy to make, and of course, shareable.

You can chomp away and make a big mess, but who cares, because you’re outside!

Garlic and Herb Marinated Grilled Chicken Wings

Chicken wings are always a favorite for any gathering, big or small. And these garlic and herb grilled chicken wings don’t disappoint, though they do require a teensy bit of forethought.

The garlic and herb marinade whips up quickly, but the longer the chicken wings sit in it the better. So throw them in the marinade the night before and forget em.

Garlic and Herb Marinated Grilled Chicken Wings

After a good long soak, they take about 15 mins on the grill and the only energy you’ll need to exert the following day is turning them occasionally as they cook through.

But hey, you don’t need a party to enjoy these wings. They make a quick and easy dinner too. Pair them with a some grilled zucchini, grilled cauliflower steaks or this grilled corn and peach salad any night of the week.

Tips for success

  • I like to use “party-style” wings for this recipe meaning wings with the tips removed and separated into drummettes and flats.
  • The longer you marinate these wings, the better the flavor. Overnight is ideal.
  • Patting the wings lightly with paper towels before you grill them will prevent flare-ups.
  • Watch for flare-ups as the skins renders when you grill the wings and adjust the flame so they don’t scorch.
  • These wings are delicious on their own, but a creamy dipping sauce like ranch or blue cheese is a tasty serving idea.

Ingredients
  • 1/2 cup white wine vinegar
  • 1/2 cup white wine
  • 5 cloves garlic, smashed
  • 8 sprigs fresh thyme
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp red pepper flakes
  • 2 tsp Italian seasoning, dried
  • 1 tsp sugar
  • 2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 lemon, zested (no juice, zest only)
  • 3/4 cup olive oil
  • 2 lbs chicken wings, party style
  • minced parsley, for garnish
Instructions
  1. Combine all of the ingredients for the marinade in a large bowl and whisk together.
  2. Add the chicken wings and toss well to coat. Cover the bowl or transfer the wings and marinade to a large ziplock bag and chill for at least four hours or overnight.
  3. Remove the chicken wings from the marinade and pat lightly. Heat a grill to medium heat and lay the wings in a single layer on the grate.

  4. Close the grill and cook for 15 – 20 mins, turning occasionally. Reduce the heat to medium/low midway through cooking.

  5. Serve garnished with minced parsley if desired.

    These look perfect! It’s nearing 100°f here where we are at in California so the hubs and I are grilling outside our RV every evening as the sun goes down and these sound delicious as well as quick and easy. Plan on trying these this holiday weekend, thank you so much! Yummed!

    Hi Cathy, does the recipe call for the juice of the lemon, the whole lemon cut up, or just the zest? Just making it now and can’t wait to try them tomorrow.

    These look amazing! Would they work in the oven? I don’t have a grill.

      Sure, you can cook them for about an hour at 350 degrees on a non stick foil lined sheetpan. I would save the marinade, strain it, bring it to a boil, cook, and reduce. You can brush the wings with it midway through cooking and serve it with finished wings. Remember to turn the wings a couple times as they cook. Enjoy!

      As stated in the recipe, no juice, the zest only. Hope that helps.
